Veteran-Owned Regenerative Ranch & Grass-Fed Beef We are a veteran and family owned and operated ranch in the heart of Nebraska. After serving 20 years and retiring from the military, we decided to settle down and start a ranch in the middle of America. In the Norse Mythology creation story the first cow was called Auðumbla. Auðumbla was responsible for licking away the primordial ice and giving its milk to ensure the survival of the first man. Regenerative ranching is a holistic land management approach that improves soil health, enhances biodiversity, and sequesters carbon, focused on restoring and maintaining natural ecosystems, not just producing food. Grass-fed, Grass Finished beef offers several potential health benefits compared to grain-fed beef, including higher levels of omega-3 fatty acids, conjugated linoleic acid (CLA), and antioxidants. It also tends to be lower in total fat and calories. These differences can contribute to improved heart health, better blood sugar control, and may offer benefits for reducing inflammation and cancer risk. We have many recipes for you to try and enjoy! We recently purchased organic beef from Audumbla Ranch and it tastes fantastic! The beef is lean and has a really nice flavor. Not gamey like others we have tried. Historically, we have spent a lot of money for organic beef. It's a great feeling to know where your beef is raised and the family working the ranch. Dillon does a great job of providing tons of information on organic ranching and how it benefits the earth and our family. The Auðumbla is said to be the first domesticated cow just after the ice age that gave life to mankind as we know it. We chose the name Auðumbla because like the first cow, we too want to give life to the land and its people. We are a veteran and family owned and operated ranch in the heart of Nebraska. After serving 20 years and retiring from the military, we decided to settle down and start a ranch in the middle of America. But we wanted to do things differently. We believe that regenerative ranching is not only a sustainable business but a sustainable practice for the planet. The benefits of regenerative ranching and planned grazing promote the restoration of our soil and grasslands, enhancing the biodiversity of our ecosystem while sequestrating carbon. Our philosophy on cattle and land management allows us the opportunity to produce natural beef that enhances the health of the people who enjoy it and the land that creates it. We produce the quality of beef that we want our own family to eat. We are a small, family ranch dedicated to providing the best quality and best tasting grass-fed grass finished beef. Our cattle live their entire lives on pasture eating grass. We raise our animals without vaccines or antibiotics, but sometimes they do get sick. If we have a cow that is sick and is on a downward spiral we treat the animal. We rotationally graze our cattle, moving them daily to fresh grass. After the cattle pass through we rest the grass for about 45 days before allowing it to be grazed again. This practice ensures deeper roots, greater carbon sequestration, better drought resistance, and healthier soil. We do not look at ourselves as cattle ranchers, but instead we see ourselves as Soil developers. If the soil comes first, then you will have healthy and abundant grass. If you have healthy and abundant grass, you will have fat and happy cows. Fat and happy cows make the most nutritious beef you can have.
